The emphasis is not so much on recipes - of which their are plenty - but of the process which can be adapted for whatever you have available. Inexpensive substitutes are suggested. Country wines can be turned into interesting vinegars and, of course, your cheaply made home-made Cider makes a great cider vinegar at about $1 a litre.
